Ingredients
  • 1 Pound Sashimi Grade Albacore Tuna Cut into two equal pieces
  • 2 Tablespoons Freshly Ground Pepper
  • 1 Teaspoon garlic powder
  • 1 Teaspoon Dill
  • 1 Tablespoon olive oil

Instructions
  1. Heat a heavy bottom skillet over high heat (if you have cast iron, this is preferred).
  2. Mix all of the spices together. Rub all over tuna steaks coating evenly.
  3. Add olive oil to the skillet and heat until almost smoking.
  4. Sear tuna on each side. You should only need to cook for 30 seconds to a minute. The goal is to have it cooked just enough that you can see about a cm worth of cooked fish round the outside (see the picture at the end).
  5. Let the tuna rest for about 5 minutes, and slice about 1/2 inch thick.
