My #1 pick. So pretty and very tasty. I love to crisp up the skin on my steel carbon pan (pat the filet dry and keep in the fridge a few hours to dry it, it crisps up more!). Season with salt and pepper, squeeze some lemon juice and top with chives… always a favorite!
