our partners to bring the oceans bounty directly to you. We catch and source wild caught seafood and deliver it to local farmers markets direct from the boat.

Everything is delivered fresh and natural — nothing is flash frozen, farm raised, or with color added — from wild salmon to sea scallops, albacore tuna, California halibut, butterfish, petrale sole, and more.

The Truth about Wild Salmon
Wild Salmon is about as generic of a term as soda.

You can automatically eliminate Atlantic Salmon, because there is no wild commercial fishery on the Atlantic anymore.

Beware a Play-on-Words! Example: A company called Wild Seas distributes farmed Atlantic salmon to a grocer. When it's displayed in the case, it may be displayed as Fresh Wild Seas Salmon.

Now on to the WILD STUFF. How many wild caught species of salmon are there on the pacific? The answer is 5. Pink (humpack, humpy), Chum (keta or dog salmon), Sockeye, Coho (Silver), and King (Chinook).

The Salmon Profile

Remember the fats are the healthy omega-3 that our doctors are always telling us to eat. They are also responsible for the taste of the fish.

The King or Chinook Salmon is by far the most sought after of all the species. Prized for its high fat content, thick fillets, and awesome flavor, this is the premiere salmon of the oceans and our primary target while trolling around the waters of northern California.

The Coho or Silver Salmon are the closest relative to the King Salmon and swim in our waters down here in the lower 48. However, they are protected in California as an endangered species (even though we have caught and released hundreds in a day, but we won't get into that now). In Oregon, there is a healthy abundance of these beauties, and they're slightly lower fat content make for a much better frozen product than King. This is why you'll see Frozen at Sea Coho Salmon at The Little Fish Company in the winter time when the fresh King Salmon fishery is closed.

You won't ever find sockeye salmon in our display case at the farmers market. It's not a horrible choice, but the flavor profile and fillet size just doesn't meet our standards. The other issue is that sockeye salmon are almost exclusively caught in the river systems of Alaska rather than the open ocean. We'll get more into that in a bit.

Rarely will you find fresh Chum or Pink Salmon in the lower 48 unless you're shopping in the canned foods aisle. Chum and pink are barely fit to eat in their fresh state. You will also see them in your commercially packaged "Wild Smoked Salmon" products.
